Skittish? What the hell is skittish? It's not even a term to define the handling of a car. If anything it's more about ride control (as in ride comfort with regards to damping and springing), but not handling.

Lots. Porsches of old were called widdowmakers. Porsches these days are rather more predictable and sorted. Indeed, the main reason Porsches got such a bad press for many many years (in the UK at least) was because of their unpredictability at the limit with the rear engined layout. The point is, a mid engined car is skittish. A mid engined car on road tyres is even more so. Lancia Stratos anyone? A Porsche doesn't swap ends unless you want it to. A car will always pivot around the greatest mass within the car so a mid engined car pivots around the mid of the car, thus creating a skittish and un-predictable nature.
The point is, a mid engined car isn't skittish by design. Road tyres don't make a difference.

Define skittish.

How well do you know the Lancia Stratos? You do know my family own one, and that I drive it fairly regularly?? You do know why that car is difficult to drive on the limit (hint: it has very little to do with the position of the engine, and a lot to do with the oversquare wheelbase:track ratio and the toe-out on the rear wheels).

Please read about weight distribution and polar moment of interia. The Stratos is as well balanced, in terms of weight distribution as most mid engined cars. The 911 is a tail happy monster that has more in common with a pendulum than a motor vehicle.

Mid engined cars are very very predictable. It's one of the major selling points.

Repeat: Please define skittish. It's a word you might use to describe a person with a nervous twitch or the motion of a waterboatman, but hardly a good word to describe the dynamic behaviour of a car.
