And I know there's going to be a simple answer,
but why can't I move off the start line in a single seater car (F1)?
What am i missing?

did u shift up a gear?

Maybe the "gearbox" is set to shifter. Go to options > controls and set it to sequential. Or maybe the other way around..

ummm....press the gas

Thats weird.. Can you get other cars going.

Definitely in the F1 and not the MRT5? MRT5 has a bike 'box, so you have to shift down to select first gear.

Controller working?

Don't the single-seaters automatically use the sequential gears due to the scripting system nowadays ?

If you haven't been using sequential shifting, you may have to assign gear up/gear down.
