How do I get the camera angle so I can see everything from the hood / roof?

Press the "v" button (or "c", not quite sure) to cycle through the different views.

Do you want bigger field of view or camera positioned on roof/hood?
E: V is for cycling. E: Through cameras of course.

go into options and you can make a custom view (under view section).

What? It's just a custom view, right? You don't need anything for that, you can just adjust it in LFS' options. I have no idea where or how, though, as I've never done it I'm sure someone will answer your question shortly.

Here is a bit more detail about setting up a custom camera.

Martin, welcome to LFS
You can use keys 5 & 6 to change FOV on the fly, and F9-F12 to show the tyres and other "live info", and if you havn't found it already, virtual gauges and pedal bars etc can be setup in options/display.
