if you lock s2 again... so you can go to the demo servers... and then you go back and unlock it the next day or... later on that day... does it count off one of the 3 unlocks you get?

You don't need to lock LFS to join demo servers. Just select the 'Demo' mode in MP and race. I suppose it would count, but you can check it easily for sure by logging in at www.liveforspeed.net, it shows you how many unlocks you have available to you.
